Do teams have various transmission geared to each track or do they run the same gearing all season?

I'm not sure how it works with the mandated gearbox durability (5 races?) but I think they can change ratios freely. I know next year they will have to select 8 ratios before the season, and can choose any 7 to go on the car (unless the regs have changed since the last time I read them).

Wow, I thought I'd be able to answer this question, but...
I know they are limited to a certain number of gearboxes per year (8?), yet I would have thought they would definitely change their gearing between contrasting tracks like Monza and Monaco.

The ratios are determined by the teams in advance and they then declare to the FIA. The determination is done taking into account the entire calendar. Next year apparently they're going to run an 8-speed gearbox that cannot be changed or something.
9.6 Gear ratios :
9.6.1
The maximum number of forward gear ratios is 7.
9.6.2
The maximum number of numerical change gear ratio pairs a competitor has available to him during a Championship season is 30. All such gear ratio pairs must be declared to the FIA technical delegate at or before the first Event of the Championship.
9.6.3
No forward gear ratio pair may be :
- less than 12mm wide when measured across the gear tooth at the root diameter or any point 1mm above or below the root diameter. Above this area each side of the gear teeth may be chamfered by a maximum of 10‹. In addition, a chamfer or radius not exceeding 2.0mm may be applied to the sides and the tip of the teeth ;
- less than 85mm between centres ;
- less than 600g in weight (excluding any integral shaft or collar). If an integral shaft or collar is to be excluded the mass of this may be shown by calculation assuming the gear to be 12mm wide and the shaft geometry to be the same as that where slide on gears are used.
9.6.4
Gear ratios must be made from steel.
9.6.5
Continuously variable transmission systems are not permitted to transmit the power of the engine defined in Article 5.1.
9.7 Reverse gear :
All cars must have a reverse gear operable any time during the Event by the driver when the engine is running.

So no, you may have any ratios you wish as long as you do not exceed the 30 numerical changes and state this to the FIA.

for 2014, they will switch to 8 speeds, and will not change ratios. They must declare what ratios they will use before the beginning of the season..
for 2014 only, they are allowed one "oops, we chose the wrong ones" and may select another set one time..

They're allowed 8 engines in a season, but I'm fairly sure it's only 5 gearboxes.

Can't they at least change the final drive ratio though? Otherwise they'd only use the first 4 at Monaco or would be on the limiter at 150 down the Monza straights.

They consider the differential part of the gearbox.

A gearbox is defined as all the parts in the drive line which transfer torque from the engine crankshaft to the drive shafts (the drive shafts being defined as those components which transfer drive torque from the sprung mass to the un-sprung mass). It includes all components whose primary purpose is for the transmission of power or mechanical selection of gears,bearings associated with these components and the casing in which they are housed.

So am I right, well more likely a happy medium. Will we see slower speeds at the faster tracks? I don't doubt these teams have the ability to find a solution.

The eight speeds will help a bit.
They have guys crunching the numbers to find the best final drive to suit all the circuits. It won't be an issue.
